Chimichurri Prawns
Ingredients:
La Mesa Chimichurri (180ml)
1 pound (450g) large prawns, peeled and deveined
Salt and pepper to taste
Lemon wedges, for serving
Instructions:
Reserve a portion of the chimichurri sauce for later, and use the rest to marinate the prawns. Toss the prawns in the sauce until well-coated. Let them marinate for about 15-20 minutes.
Preheat a grill or skillet over medium-high heat.
Season the marinated prawns with salt and pepper to taste.
If using a grill, lightly oil the grates to prevent sticking. Place the prawns on the grill and cook for about 2-3 minutes per side until they are pink and cooked through. If using a skillet, add a drizzle of olive oil to the preheated skillet and cook the prawns for the same amount of time, turning once, until they are pink and cooked through.
Once the prawns are cooked, remove them from the grill or skillet.
Serve the chimichurri prawns with lemon wedges on the side.
Drizzle some of the reserved chimichurri sauce over the prawns, or serve it on the side for dipping.
